Butternut is on every veg stall from Polokwane to Gqeberha, and it's cheap all winter. Roasting it first gives this soup its sweetness, so there's no cream in it at all.
Ingredients
Soup
- 1.2kgbutternut, halved lengthways and seeds scooped out
- 1 tbspolive oil
- 1onion, chopped
- 2carrots, chopped
- 2 clovesgarlic, crushed
- 1 tspmild curry powder
- 1lvegetable stock (low-salt if you can find it)
- salt, to taste
- black pepper, to taste
To serve
- 4 tbspplain yoghurt
- 2 tbsppumpkin or sunflower seeds(optional)
- fresh coriander(optional)
Method
Cook it step by stepStep 1: Roast the butternut
Heat the oven to 200°C. Rub the cut sides of the butternut with half the olive oil and roast cut-side down on a tray for 35–40 minutes, until a knife slides in easily.
