Tiramisu means 'pick me up', which is the coffee talking. It's the easiest impressive dessert there is, and it has to be made ahead, which makes it perfect for guests.
Ingredients
Coffee
- 300mlstrong coffee, cooled
Cream
- 4eggs, separated
- 100gsugar
- 500gmascarpone, at room temperature
- 1 tspvanilla essence
To layer
- 300gsponge finger biscuits (boudoir biscuits)
To finish
- 3 tbspcocoa powder
Method
Cook it step by stepStep 1: Make the coffee
Make the coffee strong, then leave it to cool completely in a shallow dish.
Step 2: Beat yolks and sugar
Whisk the egg yolks with the sugar for about 4 minutes, until pale and thick enough to leave a trail.
