Butter chicken was invented to use up leftover tandoori chicken, which is why the marinade matters more than the sauce. Serve it with rice, naan, or both.
Ingredients
Chicken
- 800gchicken thigh fillets, in big chunks
- 200mlplain yoghurt
- 1 tbspginger and garlic paste
- 2 tspgaram masala
- 1 tspturmeric
- 1 tspsmoked paprika
- 1 tspsalt
Sauce
- 60gbutter
- 1onion, chopped
- 1 tbspginger and garlic paste
- 2 tspmild curry powder
- 1 tspground cumin
- 1 canchopped tomatoes (400g)
- 60gcashew nuts(optional)blended in, they thicken the sauce
- 250mlfresh cream
- 1 tspsugar
To serve
- fresh coriander
- 300gbasmati rice
