Koeksisters are a weekend project and a family job: someone plaits, someone fries, someone guards the syrup. The magic is the contrast, hot from the oil and straight into syrup so cold it crackles.
Ingredients
Syrup
- 1kgsugar
- 500mlwater
- 1cinnamon stick
- 1 tspground ginger
- ¼ tspcream of tartar
- 2 tbsplemon juice (about half a lemon)
Dough
- 480gcake flour (4 cups)
- 4 tspbaking powder
- ½ tspsalt
- 50gcold butter, cubed
- 1egg
- 250mlmilk, plus a splash more if needed
To fry
- 1½lsunflower oil, for deep-frying
Method
Cook it step by stepStep 1: Make the syrup ahead
Stir the sugar and water in a pot over medium heat until the sugar dissolves. Add the cinnamon stick, ginger and cream of tartar and simmer for 5 minutes without stirring. Take it off the heat and stir in the lemon juice.
